Grape and Olive Oil Loaf Cake

When aipi [orange cake is still on hold :)]  made the orange loaf cake I was so tempted at the pics that I wanted to make it...So after two days,after lunch and grape juice, I decided to make it.. I removed the necessary ingredients from my pantry and then suddenly I felt...Y not grape cake instead of orange cake...Yes the grape juice hang over was still there :)... I had the grape pulp remaining to which I had not added water so..I started with it...Yup during the whole process of making I was sure that the effort was going to be in the bin...[You know positive thinking...he he..:)]By the time I could decide and start it was already 5.00pm and my son had started to come behind me...and my hus wud come in by another 45 min..So overall it was a great time for me...Anyways I kept the cake inside the oven and after 30 min opened and checked it..yesss it had set.. now how wud it taste like..next tension...and my hus came in..Seeing the cake he said...Now you have gone mad baking cakes...anyways is it vanilla cake...I giggled and said no no...a new recipe...just formulated by me..wait for sometime..
After 25 min...you know curiosity to know what happened...I cut the loaf and to my horror a gray coloured cake piece...I had used red grapes..pulp was bright red...cake batter was light red...how come gray cake...:o) Now I was sure ok to the bin...

I just took the piece in hand...shud say that it was super soft and fluffy..bit a small piece and wow the cake was superb...Yupeeeeeee.. it was a hit (other than the color :))...



All Purpose Flour/Maida-1 cup
Cornstarch-1/4 cup
Baking Powder-2 tsp
Baking Soda-1/2 tsp
Salt-1/4 tsp
Sugar-1/2 cup
Yogurt-1/4 cup
Red Seedless Grape Juice-3/4 cup
Egg-1
Extra Virgin Olive Oil-4 tbsp
Vanilla essence-1/2 tbsp

Method Of Preparation:
1. Wash the grapes,grind it without adding water.It wont be too watery as there would be the skin of grapes,in pulpy form.Keep aside.
2. Combine all the dry ingredients together.
3. Beat sugar and egg till it becomes smooth for 2 min and then add oil,yogurt and beat for a minute.
4. Add the grape pulp,vanilla essence to egg mixture  and mix it with dry ingredients.(don't over mix it)
5. Grease a loaf pan (aipi used this 5x8 in,I dont know wats the size of my loaf pan...it is small,so I baked in two pans).., add batter to it and place it in to a preheated oven at 375 F and bake it for 35 to 40 min. until toothpick inserted in the center comes out clean
6. Cool in the pan for 15 min and then move to wire rack and cool completely.Serve at room temperature.





Note: Its my own idea of adding grape pulp..How ever it was a success at my home...I should say, try it at your own  risk.. :)

It was probably the oxidation of grapes which gave it the grey color,but other than that-The cake has such a fluffy texture and also has enough juices to retain the moisture,I enjoyed your honest post and your apprehensions about the cake- I am very happy it turned out so good :-)Experiments lead to great inventions !!!
