Grape Granita & Drink
Fruits occupy a major portion of my refrigerator...Whenever we see something fresh we end up bringing it home...thinking that it would be sweet and devoured by our son...and at the end its me and my hubby who has to finish it off as it would be extremely sour...last time we had brought some grapes which was like that and I had moved it to the inner part of fridge...last day when I was digging into the refrigerator, found some spoiled...ah Nooo... wrinkled grapes....I took them out to examine...Nothing had happened other than getting wrinkles..:)...So i was like what to do with them...throw or save....I was sure that I wont get any juice, nor could dry it for further use...so I decided to experiment...and the result is here :)
Amount of ingredients is approx. as I just took everything and made it...
Grapes-1 nd 1/2 cup
Water-1/2 cup
Sugar-1/4 cup(add more if needed)
Method Of Preparation:
1. Boil the grapes along with sugar and water for 5 mins.The grapes should open up, else boil till it does..Then remove from heat and allow to cool.
2. Squeeze the grapes. Separate the juice with a strainer. You will get a delicious drink.Serve chilled.
Method Of Preparation:
1. Pour the juice in a baking pan and freeze it for 3 hours.
2. Remove scrape the frozen crystal using a fork continue to freeze, scraping every 30 minutes, until the mixture is totally frozen and granular, about 4 to 5 hours.
3. Scrape the granita into chilled bowls and serve.
Amount of ingredients is approx. as I just took everything and made it...

Mirchi bajji
Mirchi bajji is again a fav snack of mine....My hubby is not a person who likes hot food....so he is kind of away from these stuffs...Its after my long effort that he started to eat it to give company to me...and that too the outer covering...Now he is fine with it...so I make it reducing the hotness according to his taste...Here is the recipe for it.
Green Pepper-5 no(I guess it is banana pepper)
Oil to fry
For Stuffing:
Potato-2 no(boiled and mashed)
Onion-1 no(small)
Ginger-1 tsp(grated)
Garam Masala-1/4 tsp
Chaat masala-2 tsp
Salt little.
For Coating:
Gram Flour-1 cup
Rice powder-1/4 cup
Water-1 cup
Salt to taste
Method Of Preparation:
1. wash the pepper,slit it on one side,remove the vein and seeds,keep it in salt water for 10 mins.Pat dry and keep aside.
2. Mix the ingredients for stuffing in a bowl.keep aside.
3. Mix the coating ingredients to form a medium thick batter,a little bit thick than dosa batter and keep for 10 min.
4. Mean while stuff the peppers with the stuffing mixture and keep on a plate.
5. Heat sufficient oil in a wok and when hot,take a stuffed pepper ,dip in the flour mixture,coat it completely and deep fry till golden.
6. Serve warm with chutney.

Coconut Balls
I had made coconut balls using condensed milk and rolled it in chocolate....ahhh...it had tasted superb...Later I had seen this recipe in Priya's blog...immediately I fell in love with that...I was sure of the taste but more than that the color attracted me....There is nothing great to change in it...I just felt that a few nuts would increase the taste...so added bits of fried cashew and was not wrong doing so..Anyways its a great sweet...Thanks Priya..:)
Dessicated Coconut -2 cups(unsweetened)
Condensed milk-1 cup
Rose syrup-1 tbsp
Cardamom powder-1/2 tsp
Cashew nuts-1 tbsp
Ghee-1 tsp
Method Of Preparation:
1. Heat ghee in a non stick pan and fry the cashews, break them to small pieces and keep aside.
2. In another nonstick pan boil the condensed milk,rose syrup and immediately add the dessicated coconut.
3. Cook till the mixture comes from sides of pan,then add cardamom powder along with broken cashews and mix well and remove from heat.
4. When medium warm roll to medium sized balls and roll over dessicated coconut.
5. Serve or store them in airtight box. I refrigerated remaining in airtight box.

Green gram Curry
As I said before...my hubby can have recipes with green gram 3 times a day for 365 days...:)...This is one among them....
Green gram-1 cup
Turmeric-1/4 tsp
Chilly powder- 1 tsp
Salt to taste.
Coconut- 1/4 cup plus little more.
Onion-1/4 piece(finely cut)
Mustard-1 tsp
Cumin-1/2 tsp
Curry leaves-1 stalk.
Dry Red Chilly-2 no(cut to half)
Method of Preparation:
1. Soak the green gram for 2 to 3 hrs. Then in a vessel add green gram 2 to 3 cups of water,turmeric,chilly powder and cook.
2. Grind the coconut to smooth paste using little water and keep aside.
3. Once green gram gets cooked add salt and coconut mixture and boil it for sometime.Take from heat.
4. Heat oil in a wok,sputter mustard,dry chilly and cumin seeds. Then add onion and fry till light brown.Add curry leaves and add the cooked curry to it. Off the gas and serve with rice/roti/puttu.
Tips:
1. If you have forgot to soak the gram, you can pressure cook for 4 whistles on low. The gram will be soft then.
2. The whole process can be done using pressure cooker.
3. Instead of coconut you can use coconut milk(1/4 cup).Then add milk and simmer.

Hara Bhara Kabab
Potato-3 no(boiled and mashed)
Spinach-20 leaves
Green Peas-3/4 cup(boiled and mashed)
Green chillies-2 no(cut to half and then minced)
Garlic-1/4 tsp(minced)
Ginger-1 tsp(minced)
Coriander leaves-2 tbsp(chopped)
Salt to taste
Cornflour-2 tbsp
Garam Masala-1/4 tsp
Chaat masala-1 tsp
Cashew nuts as needed
Oil to fry
Method Of Preparation:
1. Blanch the spinach in boiling water with salt for 5 mins,drain and rinse with cold water,chop finely.
2. Mix all the ingredients except oil without water and make small balls of that dough,press between palms to form tikkis.
3. Dust in cornflour,and place half of a cashew and press slightly then deep fry in hot oil on both sides for about 3 to 4 mins.Drain to a kitchen paper and serve hot with sauce.
Tips:
1. If needed you can add more spinach,then if you find difficulty in forming tikkis add little cornflour for binding.

Fruit Salad
Today I had decided to post something else....then the pics of that was not good so was lazy to post...Then as my son slept I tried my hands on my new camera...got some ok pics in manual mode without any post processing....so decided to show off those pics...:) So you got the info right???Here is the presentation of a simple recipe which is great for summer...easy to prepare and delicious to eat....
Fruits of your choice.Select it in such a way that you have sweet as well as tangy fruits.I used
Water melon
Papaya
Grapes
Apple
Raisins
Orange
Bananna altogether 1 cup
Honey-2 tbsp
Crystal sugar few
Crushed Nuts-2 tsp(your choice)
Vanilla Icecream-1 scoop for each cup
Rose syrup-1 tsp plus little for each cup
Method Of Preparation:
1. Cut the fruits to small pieces and mix with honey and refrigerate for 2 hours.
2. In the serving bowl, add 3 tbsp of chopped fruits,1 tsp of rose syrup,scoop of vanilla and few drops of rose syrup along with nuts and crystal sugar on the ice cream. Serve

Black Forest Cake
Hi friends....Many special days came my way last week...so cudnt spend more than 5 mins on blog....First and foremost it was our 3rd wedding anniversary on 4th....which was a very very lucky day for us....a new member joined our family...A Nikon D3100....:)....I should say that I have got the most loving husband.....Then a small get together and then came Mothers day....My son gave me a cute gift....know what??? He called me Amma...even though he had been calling me earlier my hubby never agreed that he is calling amma...he wud say that he is just crying...but yesterday he agreed....So that made my day...
I had wanted to make a cake with frosting this time...I had never done this before...so finally decided to make Black forest for anniversary.....After searching a lot of places I finally made a cake using many recipes from Internet....The base cake is from sanjeev kapoor's site...and then filling of my own....cake was really good...Learned many lessons while frosting and ya after that too:)...Anyways the cake was successful as the person for whom I made it enjoyed it a lot and was surprised too...:) So here is the recipe...
All purpose Flour/Maida-1/2 cup
Cocoa-3 tbsp
Baking Powder-1 tsp
Eggs-3 no
Sugar-6 tbsp
For Filling:
Whipping Cream-2 cup
Cherries-1/2 cup
Sugar-4 tbsp
Water-1 Cup
Chocolate Shavings as needed.
Sprinkles little.
To make sugar syrup, mix water with sugar and cherry and boil for some time. Cool and keep aside. Drain the cherry from syrup and use it for decoration and filling
For Cake:
1. Preheat the oven to 350 F, grease a 8 inch pan.
2. Sift the flour,baking powder,cocoa thrice and keep aside.
3. Beat the egg for sometime,add the sugar and mix till it becomes thick and pale,about 10 to 15 mins.
4. Add the sifted mixture over the egg and fold gently.Transfer the batter to cake pan and bake for 25 to 30 min. or until spongy to touch. Cool in the pan for 5 min and then on the rack.
5. When completely cooled cut horizontally to three pieces or just to half for layers.Take each layer, sprinkle some sugar syrup. Whip the cream till it becomes stiff.
6. Place the bottom piece on a rotating plate or the plate you would be using, apply a layer of whipping cream,and on top of that a few crushed cherries.
7. Place the next layer and do the same thing,finally keep the last layer and apply cream on top and sides,and give a smooth finish to it.
8. Use a piping bag with star nozzle and decorate with curls, place whole cherries on top and some sprinkles and spread the chocolate shavings on cake.Chill and serve.
Tips:
1. Level the cake before frosting...I dint do that :(.
2. Dust any cake particles too..
3. Add little sugar to whipping cream if needed.

Vellayappam/Appam
Hai friends....Now I have become a very busy mom....My kid has become a big boy...so he keeps himself busy by helping me whole day....Youlll want to know How he helps me.....
1. He disconnects all the plugs from the sockets and checks if proper current is passing through the socket by putting his screw driver(cute little fingers)
2. He helps me to clean the whole house by finding smallest of the things on floor and ya eating them up....Gave me two attacks by acting as if he got choked....to my luck nothing great happened.
3. Unfolding all the clothes that I am folding....
4. Reaching to the table and pulling things down...etc etc etc....
So now I have started to be around him....always...A blink of the eye and he is upto something...very dangerous...and ya I forgot one main thing...He never leaves me alone...always stays awake..:)...If I get angry he shouts at me...If I scold him He gives a smile ..If I call him here He goes and sits there...So altogether I am very very busy....
Now todays post...Appam is a common recipe in kerala...Traditionally it is made using a small amount of cooked rice, and fermented coconut water...Here is a easy recipe to prepare appam...

Rice Flour - 2 cups
Rapid Rise Yeast - 1 tsp
Sugar -3 tbsp
Rice Powder/Rava (Semolina) -2 tbsp
Thick Coconut Milk -1/2 to 1 Cup (I use Canned Coconut Milk)
Water as needed
Salt to taste
Method Of Preparation:
1. For making Rice/Rava Paste (Kurukku) , take 2 cups of water in a pan and add 2 tbsp of rice/rava. Bring it to a boil stirring continuously. Reduce the heat to low and continue stirring. When the mixture becomes a thick paste, remove it from heat and allow it to cool.
2. In a big bowl, combine Rice Flour, Sugar, cooled Rice/Rava paste, Yeast along with Coconut Milk and salt. Add 1/2 to 1 cup water(more if needed) and blend/whisk everything to form a smooth batter. The batter should be like dosa batter,loose in consistency...
3. Leave the batter in a warm place for around 3-4 hours and allow it to ferment.
4.Heat the appam pan/chatti. Pour a ladle full of batter into a appam pan/Chatti (deep round pan used for appams) and swirl the pan lightly, spreading the batter to the sides of the pan.
5. Cover with lid and allow it to cook for around 3 minutes on medium heat. When the center of appam is done and the edges start detaching, remove the appam carefully from the pan. Do not flip appams.The other side will be cooked with the steam,when you close the lid.
6. Serve warm with stew/ any curry of your choice.
Tips:
1. If using dry yeast add luke warm water and sugar mix and keep aside for 10 min to froth(yeast to become active).Then mix this with the other ingredients and let it stand for min 8 hrs/overnight to ferment. Use luke warm water only,not hot water.
Here is the pic of a small helping hand from my son....I had given him spoon...so he came running behind me...gave me the spoon to click and is about to take the wok...:)
