Egg Cooked With Kasuri Methi

Simple spicy and quick side for rice.


Eggs-4 no(hard boiled)
Onion-1 medium(thinly sliced)
Green chili-1 no(slit)
Capsicum-1/4 piece(cut to cubes)
Tomato-1 no(thinly sliced)
Ginger garlic paste-1 tsp
Red chili powder-1/2 tsp
Biryani Masala-1 tsp
Salt to taste
kasuri methi-2 tsp
Oil-1 tbsp




Method of Preparation:
1.Heat oil add garlic paste and fry onions.When they turn soft and light brown add tomatoes and cook till mushy.
2. Then add the spice powders and mix. Cook the capsicum in this mixture till its soft and has crunch.
3. Add the kasuri methi and then half cut egg into it and mix well and softly.
4. Cook for 3 to 4 minutes and serve as side with rice.

Egg Biryani

A healthy delicious breakfast, small fight with sister, a flavor packed lunch, movie with sis and parents, a visit to the park with friends has been a routine on Sundays during my childhood. Sunday lunch was always special at home. Everyone was there...enough time to enjoy and eat food...is a small part that I still adore...Unlike me Mom used to make variety rice only on Sundays or if guests are around...normal days the meal would be an elaborate one with curries, stir fries, rice, sides..Where as the lazy me loves to prepare variety rice everyday..




This is one such dish from her variety meal recipe...
Egg-3(Boiled and peeled)
Green peas-1/4 cup(frozen)
Ginger garlic paste-1 tbsp
Onion-1 no(thinly sliced)
Tomato-2 nos(big one)
Salt to taste
Onion-1/2 of medium one(thinly sliced)
Coriander leaves-2 tbsp
Oil-1 tbsp
Spices:
Bay leaves-2
Cloves-7 no
Fennel seeds-1 tsp
Cardamom seeds-1/4 tsp
Cinnamon-1 1/2 inch piece
Spice Powders:
Red chili powder-1 tsp
Turmeric powder-1/2 tsp
Coriander Powder-2 tsp
Biryani Masala-1& 1/2 tsp
To cook Rice:
Rice-1 1/2 cup
Water-21/2 cups
Salt to taste
Ghee-1 tsp




 Method of Preparation:
1. Cook the rice 80% with the required water,salt and ghee.Once cooked fluff the rice and set aside.The above measurement is given to cook rice in pressure cooker.
2. Boil and peel the eggs, slit them without cutting to edge and set aside.
3. Heat little oil/ghee in wok and fry the thinly sliced onions till turns golden brown. Drain and set aside.Then add oil in a wok. Add the spices to it and fry for few seconds.
4. Then add onion and ginger garlic paste and cook till it turns translucent. Add spice powders and mix well for a minute till raw smell goes.
5. Add tomato and cook till it is soft and mushy. Add peas and cook covered till it is soft.
6. Cook on low heat. Add a few tbsp of water if really needed.Add salt and mix well.
7. Now add the eggs and  give it a good mix along with a tbsp of coriander leaves.Turn off the heat.




To assemble:
1. Take a pressure cooker and add half of the masala at the bottom. Layer this with rice and add remaining masala and another layer of rice.
2.  Drizzle little ghee on top and close the lid. Cook on low heat with whistle on for 15 to 20 mins. See that it doesn't whistle.
3. Turn off heat and wait till the pressure goes for about 10 mins. Then open the cooker and transfer the biryani to a bowl. Add the remaining coriander leaf, fried onion and serve warm with a squeeze of lemon juice.




Notes:
1. Cook rice in the way you are comfortable with. The rice should be 3/4th cooked and have stand alone grains
2. Instead of cooking the biryani in pressure cooker you can cook it in oven too. In that case preheat the oven to 350F. Grease a baking dish. Layer half the masala and then half the rice. Add another layer masala and then rice. Add the fried onion on top and drizzle ghee on top.Cover and cook for 25 to 30 mins.
3. You can use green bean,carrots or a mix as veggie here.or use no veggie at all too.
4. If using dried variety of peas soak and cook earlier. Then add to the masala and continue cooking.
5. Add salt accordingly.

Egg with garlic chives

Had brought a bunch of garlic chives during last visit to farmers market...The plan of buying was to click...But got hooked with many other things that I totally forgot about it. That lost its beauty being hidden in my refrigerator...Anyways cooked it up with egg to make a delicious side...



Eggs-3 nos
Onion-1/2 of big one(chopped to small pieces)
Tomato-1 small(finely chopped)
Green chili-1 no
Turmeric powder-1/4 tsp
Spring onion(green part)-2 tbsp(chopped)
Salt to taste
Garlic chives-3 tbsp(chopped)
Pepper powder-1 tsp(finely crushed)
Oil- 2 tsp


Method of Preparation:
1. Heat oil in a pan. Add the chopped onions and fry till it turns translucent.
2. Add the green chilies,turmeric and mix well, then add tomatoes. Cook for few minutes till it turns soft.
3. Add the garlic chives to this and mix well.Cook for a minute.
4. Add the required amount of salt.
5. Now reduce heat to low and break the eggs into it. Mix it well with all the other ingredients till it gets cooked.
6. Add the pepper powder and mix well. Don't heat the egg once it sets. If overcooked  egg turns out dry.Serve warm with rice/flat breads.

Chinese Tea Eggs/Marbled eggs



Tried this recipe from  Appetite For China. Was really trying to imagine its taste when there was a mixed smell all around the room while this was boiling...Like its beauty its yummy too...










Egg-3 no large/ Medium
Black Tea-1 tbsp
Dark Soy Sauce-1/4 cup
Salt to taste
Sugar-1/2 tsp
Star Anise-2 no
Cinamon stick-2 inch approx.
Pepper corns-1/2 tsp(cracked)






Method Of Preparation:
1. Add water and egg in a vessel and boil it. Let the eggs get cooked ie 5 min on medium
2. Now allow it to cool so that it can be handled and then with the back side of spoon or knife crack all over the egg.There should be cracks alone, do not break the shell



3. Now return the egg back to the same vessel, see that there is water above the egg add all the ingredients to it and boil it for another 40 to 45 mins. Turn off the heat and keep the egg immersed in the liquid for 3 to 5 hours min. for dark designs on egg.
4. Serve warm or cold. Delicious both ways.Great as a side or snack..

Kerala Egg Roast

Egg-3 no(hard boiled and shell removed)          
Onion-1 no(big, cut to thin slices lengthwise)
Tomato-1 no(medium, cut lengthwise)
Green chilli-1 no
Ginger-garlic paste-1 tsp
Chilly Powder-1 tsp
Turmeric powder-1/4tsp
Coriander Powder-2 tsp
Garam Masala-1 tsp
Curry Leaves- few leaves
Salt to taste
Coconut Oil-2 tsp






Method of Preparation:
1. Heat oil in a wok. Cut slits in the hardboiled, shelled eggs and keep aside.
2. Add  the onion and fry till it turns light brown, then add ginger garlic paste, green chilli, curry leaves and fry till raw smell goes for few seconds.
3. Add the spice powders and mix well for a minute. See that you dont burn it, so do it on low heat. Now add the cut tomatoes along with salt and mix well. cook till the tomatoes becomes soft and mushy.
see that it doesnt stick to the bottom, if so add few tbsp of water.
4. Once tomatoes becomes mushy add 1/4 cup water and cook for 8 to 10 mins. After about 5 mins put the boiled eggs and continue cooking.
5. If you want the gravy thick cook it till water reduces, else turn off the heat.
6. Serve with variety rice/flat breads




Notes:
1. You can also fry the eggs in liitle oil and then add it to the gravy.

Egg Sandwich

Wish You All A Very Happy Vishu.....
I am too busy as it is my sons first Vishu....so really trying to make it a special one....working towards it..Wont be in the blogging world for 2-3 days...will be back with all the sadya items :)
For today I am posting something that was in my draft from a long time...a simple, yummy sandwich...


White bread-4 pieces(sides removed)
Mayonnaise- to seal the edges
Butter- to apply on slice

Stuffing
Egg-1 no(hard boiled and halved lengthwise)
Onion-1/2 of medium(thinly sliced)
Tomato ketchup-2 tsp
Chilly sauce-1/2 tsp(Chinese sauce) or use chilly powder-1/4 tsp and garlic-1 clove (minced)
Salt to taste
Oil-1 tsp.

Method Of Preparation:
1.Heat oil in a wok, fry onion till translucent,add tomato,chilly sauce and salt.Fry for some time,till it becomes dry.Add egg and mix.Turn off the heat.
2. Toast the bread by applying butter on both sides.Keep aside
3. Take a piece, apply mayo on the edge, keep the stuffing with 1 half of egg  ,keep aside. Take another piece.apply mayo on edge and close the earlier piece with it by pressing softly at edges.
4. Cut it diagonally.


Tips:
1. Be careful while adding salt,as all sauces have salt in them.

Vegetable scrambled Egg

Scrambled egg is a common recipe at my home...Here is something with veggies in it.



Egg-2 no
Milk-2 tbsp
Onion-1 small(cut to small pieces)
Beans-1/4 cup(cut to small pieces)
Tomato-1/2 no(cut to small pieces)
Cabbage-1/4 cup(cut to small pieces)
Carrot-1 medium(cut to small pieces)
Green chilly-1 no(cut to small pieces)
Black Pepper powder-1 tsp
Olive Oil-1 tbsp
Salt to taste.



Method Of Preparation:
1. Heat oil in a wok,add onion and fry for 2 mins,Then add all the vegetables except tomato,mix well,cover and cook with milk till they become tender.Cook on low flame.
2. Add salt and pepper powder and mix well.then add the eggs,  and scramble it and cook on medium till it slightly sets.Then add tomato and mix well.
3. Serve warm with rice or as breakfast.


                              

Tips:
1. While cooking the veg, if you feel that its burning,add 1 to 2 tbsp of water.You really wont need it.
2. Add or remove veg according to your taste.

Egg Masala curry

This is  very simple egg masala...with very few ingredients...



Egg-4 no
Oil-2 tbsp
Onion-1 medium(cut to thin slices)
Tomato-2 no medium(cut to thin slices)
Red Chilly powder-2 tsp(reduce if you dont want it spicy)
Salt to taste
Turmeric powder-1/4 tsp
Ginger paste-1/2 tsp
Garam Masala-1 tsp
Bay leaves-1 no
Water nearly 1/4 cup(Use more if gravy becomes too thick)
Curry leaves few


Method Of Preparation:
1. Boil the eggs,remove the shell,cut them to halves and keep aside.
2. In a wok, heat little oil and add the onion,ginger paste and bay leaves and fry them till onion becomes translucent.
3. Add chilly powder and turmeric and fry for few secconds.
4. Add tomatoes and fry them till tomato becomes soft. Its best to close the lid and cook without adding water for about a minute or more.
5. Then remove the lid, mix well and add water to it along with salt.Mix well and cook for some time.
6. Add the garam masala,curry leaves and cook for few seconds and then add egg and turn fire off.
7. Serve with roti/variety rice.

Stuffed Egg

Egg-2 nos
Onion-1/2 piece(chopped)
Green chilly-1 no(chopped)
Coriander leaves little(chopped)
Cornflour- 2 tbsp
Salt to taste
oil to fry
Water to boil and mix.


Method Of Preparation:
1. Boil egg for ten minutes or till it is hard inside.
2. Chop the onion, green chilly, coriander and mix well in a bowl with salt.( If you want it spicy add little pepper powder)
3. Cut the egg to equal halves. Remove the yolk powder it  and add that with the above mixture.
4. Fill the mixture into the egg white and close the halves with the help of a tooth pick.
5 In a bowl mix the corn flour with little water. Let it be little thick so that a thick coating can be formed when egg is dipped.
6. Fry this dipped egg till the outer covering becomes golden brown and crisp.
7. Serve hot.

Scrambled egg nd peas/Peas Egg Bhurji

Egg-3 nos
Sweet Peas-1/2 cup
Green chilly-2 nos
Onion-1 no (finely chopped)
Curry leaves
salt as per taste.
Garam Masala powder-1/2 tsp
Oil to fry
Pepper powder
Coriander leaves

Method Of Preparation:
1. In a pan heat little oil. Add the onion and fry it till it becomes light pink.
2. Add chilly, green peas, garam masala , salt and curry leaves and fry for 2 min.
3. Add the egg and mix well with all other ingredients.
4. Heat it till the egg is cooked well.
5. Add coriander leaves and pepper powder and serve hot.
